Algae is the national food of many nations: China consumes more than 70 species, including fat choy, a cyanobacterium which is considered a vegetable. Carrageenan, from the red alga Chondrus crispus, is used as a stabiliser in milk products. This book studies various domestic and commercial uses of algae including agar plate, algae fuel, porphyra, nori, and laver.
